Catechins belong to the tannin family and are present in grapes and wine. They play an important role in taste structure, astringency and oxidation phenomena.
Their determination is useful because high concentrations may contribute to colour instability, browning or unwanted colour changes.
Catechin monitoring is recommended:
in white wines susceptible to oxidation;
in red wines intended for ageing;
when assessing the tannic component;
in controls related to colour stability.
