Potassium is one of the main cations present in wine. It plays a decisive role in acidity, pH and tartaric stability.
During storage, it can combine with tartaric acid to form potassium bitartrate, which is responsible for crystalline precipitation.
Potassium determination is useful for:
assessing the risk of tartaric instability;
checking the effectiveness of stabilisation;
interpreting changes in acidity and pH;
preventing deposits in bottle.
Accurate potassium monitoring helps producers manage stabilisation treatments more effectively and improve the perceived quality of bottled wine.
